In May 1999 four friends – two restauranteurs, a chef and a photographer – went on a three week holiday in southern Italy. Gail and Kevin Donovan wanted inspiration, photographer Simon Griffiths wanted to go back to Italy, while chef Robert Castellani looked forward to extending his knowledge of Italian food and his heritage.
